The story begins in the 19th century, when a certain Jean-Pierre SAYSSET settles in a small house on the Tarn, just in front of the Ambialet ferry, which is used daily by itinerant merchants, farmers and other travellers. Every day, with his family, he attends the comings and goings of these itinerants who pass by his door. Soon, people stopped by to glean some information, to chat and, sometimes, to have a drink! As the years went by, from simple "drinks" to generous pints, from small snacks to more substantial snacks, habits were formed and the place was gradually transformed into an inn. The women cook the products of fishing, hunting and gathering brought back by the men. The surrounding nature is generous. The forests are full of wildlife, the Tarn river is full of fish, and the vegetable gardens and surroundings are full of vegetables, wild fruits and mushrooms.

Today, six generations later, it is still a Jean-Pierre SAYSSET who runs the famous "Hôtel Restaurant du Pont" in Ambialet. As a proud descendant, he perpetuates the tradition of conviviality of a tasty local cooking made with the greatest respect of the product and the ancestral know-how. Surrounded by his wife Nadège, his daughter Julie and a young dynamic team, Jean-Pierre SAYSSET, "Maître Restaurateur" and artisan chief, offers a creative gastronomic cooking which sublimates the fresh regional products committed in the quality certification of the Cuisineries. He creates beautiful and delicate dishes that will delight the most discerning gourmets and can be enjoyed in an exceptional setting overlooking the Tarn, spanned by a large stone bridge built at the beginning of the 20th century.
